Couscous Tabbouleh

"I haven't been able to find traditional couscous in my local stores, so I use the boxed instant variety. I like couscous with plenty of fresh veggies in it. I rarely add salt - the boxed couscous and Parmesan cheese adds plenty. This comes together very easily and is delicious as a side dish or a light meal."

  • Cook couscous according to package directions.
  • Once all the liquid has absorbed, drizzle 1 Tbsp extra virgin olive oil and 3 Tbsp lemon juice over the couscous and fluff with a fork.
  • Add your veggies, pine nuts and cheese, and fluff again.
  • Add the parsley, and fluff again.
  • Taste and adjust lemon juice, olive oil, salt and /or pepper to your taste.
  • Chill for at least 30 minutes before serving.
