Directions

  1. Preheat oven to 350°F
  2. Spray a 9-inch square baking dish.
  3. Prepare couscous mix according to package directions.
  4. Melt 5 tablespoons of the margarine.
  5. To couscous add melted margarine, eggs, mixed vegetables, spinach and parsley. Mix well.
  6. Add ground nutmeg
  7. Add lemon pepper seasoning to taste.
  8. put mixture in prepared baking dish.
  9. Dot with1 tablespoon margarine.
  10. Bake for 50-60 minutes or until kugel is set, or golden brown and crisp on top.
