Directions

  1. Melt butter in saucepan.
  2. Add shallot and saute 1 to 2 minutes, or until tender.
  3. Add chicken broth and bring to a boil.
  4. Add couscous, corn, pepper, cayenne and salt.
  5. Cover; remove from heat and set aside 5 minutes.
  6. Fluff with a fork.
