- 1 (11 ounce) can white shoepeg corn
- 1 (15 ounce) can black-eyed peas
- 1 avocado, chopped
- 2 roma tomatoes, chopped (or hot house tomatoes)
- 2⁄3 cup chopped cilantro
- 2⁄3 cup chopped green onion

Dressing
- 1⁄4 cup olive oil
- 1⁄4 cup red wine vinegar
- 2 garlic cloves, pressed
- 3⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 teaspoon cumin
directions
- Mix caviar ingredients in a bowl.
- Blend the dressing ingredients in blender.
- Pour dressing over caviar, chill at least one hour and serve with tortilla chips.
