ingredients
- 1⁄2 cup brown sugar
- 1⁄2 cup apple cider vinegar
- 1⁄2 cup vegetable oil
- 1 red pepper
- 1 yellow pepper
- 1 orange bell pepper
- 1⁄2 red onion
- 4 stalks celery
- 1 (15 ounce) can shoe peg corn
- 1 (15 ounce) can black-eyed peas, drained
- 1 (15 ounce) can black beans, rinsed
directions
- In a sauce pan mix together sugar, vinegar and oil. While stirring bring to a boil. Set aside to cool.
- Finely chop peppers, onion and celery. Add remaining ingredients. Mix with cooled dressing 2 hours before serving.
- Serve with tortilla chips.
