Cowcumber or Cucumber Boats

  • 3 cups of water and pinch of salt into a small saucepan. Bring to a boil. Add the elbow macaroni gradually and boil until tender-about 8 to 10 minutes Drain the macaroni and place in medium mixing bowl.
  • Add tuna to macaroni.
  • Grate carrot and chop celery into tiny pieces and add both to macaroni and tuna.
  • Add mayonnaise, lemon juice, salt, and pepper and stir with fork.
  • Peel cucumber and cut off ends. Cut each cucumber length wise. Scoop out seeds and watery flesh.
  • Fill each cucumber with tuna mixture.

  1. I made these for an Anne of Green Gables viewing party and They were awesome. Several of my guests don't ordinarily care for cucumbers, but with the watery centers scooped out they loved this. It's a great appetizer or light lunch.
     
  2. OKAY! So I LOVED this recipe! It's really good and fairly easy to make! I removed some ingredients though- I didn't add any extra salt, it's pretty salty on it's own, and didn't add any macaroni noodles. I think they would have tasted good with this recipe, but seeing as how thick these boats are I doubt it'd have fit in my mouth, and I don't feel removing them effects the taste, just the nutritional value.
     
  3. This is a delightful recipe! I had some whole-wheat rotini on hand so used that instead of macaroni, which worked out fine. I forgot to peel the cucumber this time but I will try it peeled next time. The salad was nice and creamy and the lemon juice added a nice bright flavor. Garnished with a bit of chopped parsley and enjoyed a nice light lunch - thanks for sharing your recipe! Made for Spring Pick-A-Chef 2012
     
  4. This was a lot quicker to prepare because I was creating the cucumber boats while the macaroni was still cooking. But it was quick in general, which is good becuase I had a busy day today, so i definetely recommend it for people who keep busy. And it was delicious too!
