Roasted Red Pepper Sauce
- 2 red peppers, grilled then peeled
- 14.79 ml balsamic vinegar
- 14.79 ml olive oil
- salt and pepper

Crab Cakes
- 453.59 g flaked crabmeat
- 9.85 ml freshly chopped dill
- 1 red pepper, finely diced
- 29.58 ml breadcrumbs
- salt and pepper
- 1 egg
- 29.58 ml mayonnaise
- 4.92 ml Worcestershire sauce (preferably white)
- 2.46 ml dry mustard
- 78.78 ml lemon juice
- 78.78 ml breadcrumbs
- 59.14 ml clarified butter (melted, solids strained out)
directions
- To make sauce: Combine peppers, balsamic vinegar, olive oil and salt and pepper.
- Blend in blender until smooth.
- To make crab cakes: Combine dill, diced pepper, 2 Tbsp bread crumbs, pepper and salt.
- Add crab meat and stir together.
- Mix egg, mayonnaise, mustard and lemon juice together and fold into crab mixture.
- Shape into 6 or 8 cakes and press into bread crumbs to give light coating.
- Add clarified butter to frying pan and heat over medium heat.
- Add crab cakes and brown each side.
- Serve on individual plates topped with roasted red pepper sauce.
