  • Roasted Red Pepper Sauce

  • 2 red peppers, grilled then peeled
  • 14.79 ml balsamic vinegar
  • 14.79 ml olive oil
  • salt and pepper
  • Crab Cakes

  • 453.59 g flaked crabmeat
  • 9.85 ml freshly chopped dill
  • 1 red pepper, finely diced
  • 29.58 ml breadcrumbs
  • salt and pepper
  • 1 egg
  • 29.58 ml mayonnaise
  • 4.92 ml Worcestershire sauce (preferably white)
  • 2.46 ml dry mustard
  • 78.78 ml lemon juice
  • 78.78 ml breadcrumbs
  • 59.14 ml clarified butter (melted, solids strained out)

directions

  • To make sauce: Combine peppers, balsamic vinegar, olive oil and salt and pepper.
  • Blend in blender until smooth.
  • To make crab cakes: Combine dill, diced pepper, 2 Tbsp bread crumbs, pepper and salt.
  • Add crab meat and stir together.
  • Mix egg, mayonnaise, mustard and lemon juice together and fold into crab mixture.
  • Shape into 6 or 8 cakes and press into bread crumbs to give light coating.
  • Add clarified butter to frying pan and heat over medium heat.
  • Add crab cakes and brown each side.
  • Serve on individual plates topped with roasted red pepper sauce.
