Crab Salad Minus the Pounds

- 1 lb imitation crabmeat
- 4 ounces reduced-fat cream cheese
- 1 cup reduced-fat sour cream
- 1⁄2 cup reduced-fat mayonnaise
- 1 lemon
directions
- In a mixing bowl, beat together cream cheese, mayonaise and sour cream.
- Cut your lemon in half and squeeze the juice from it into the cream cheese mixture. Mix well.
- Flake, cut or snip crab meat and add it to your cream cheese mixture. Mix well.
- Serve on bakery fresh deli rolls with sliced cucumbers, tomatoes, fresh spinach, sliced onion and provolone cheese.

I am a newly engaged 30 year old mom. I am getting married to my best friend (Troy) of ten years in July. We have two children together a boy, soon to be 11 and a girl, soon to be 4. Troy is a drafline mechanic/welder at one of the local coal mines and I work for an industrial construction company as a helper to the crane mechanics and an oiler. Our son rodeos and our daughter will be starting her first season rodeoing this spring. We keep very busy with that and also with helping one of our friends out on their ranch. We have three horses, one dog and one cat. We try really hard to keep from eating out and I have found that this web site has wonderful and healthy meals. We are trying to raise our kids the same way we were raised which meant that it was a very rare occasion when mom and dad took us out to eat. I want my kids to learn that you don't have to go out to eat every meal and it is ok to learn how to cook. You will have healthier meals in general and little more in the pocket book.
