Crab Stuffed Chicken Breasts with Curry Sauce

"Boneless chicken breasts are pounded thin and then packed with sweet crab meat stuffing, baked with a creamy curry sauce and finished with a melted cheese topping. I love this rich, elegant dish because I can make it ahead of time and then just easily slip it into the oven 50 minutes before serving."

  • Melt the 3 tablespoons butter in a small pan over medium-low heat and cook the onion, celery, and grated carrot until tender, about 5 minutes.
  • Remove from the heat and add the parsley, wine, crab, cayenne and bread crumbs, mixing to combine well.
  • Sprinkle the flattened chicken breasts with salt and pepper.
  • Place pounded chicken"shiny" side down on a cutting board.
  • (When rolling the breast over a filling, the chicken holds together better when the skinned side is on the outside.) Divide the crab filling between the 6 chicken breasts, placing the filling at one side.
  • Roll up the breasts, tucking in the ends like an fat egg roll.
  • Don't worry if the ends are open a little bit, the filling won't leak out during baking.
  • Carefully,place the chicken breasts in a baking pan large enough to hold them in one layer, about 11" x 7" x 2'.
  • Melt 3 tablespoons of butter in a saucepan, then stir in the 3 tablespoons flour and the curry powder and salt.
  • Cook stirring, for 2 minutes.
  • Add the milk and wine and simmer until mixture thickens, stirring constantly.
  • The sauce should be of a fairly thick consistency, not thin and runny.
  • Pour the sauce over the chicken breasts.
  • Divide 1 1/4 cups bread crumbs over the breasts and dot with the 2 tablespoons of butter.
  • Bake uncovered, at 375 degrees, for 45 minutes.
  • Sprinkle with the grated cheese and bake for another 4 minutes or until cheese melts.
  • Remove the chicken to a serving platter and garnish each breast with the chopped tomato and minced parsley.

  2. If you are looking for a real nice tasting light curry sauce, this is the recipe to try. I used some cut up button mushrooms which I had tossed on top of the dish prior to baking... and they added to the dish. I would doubled the amount of mild curry powder for a slightly richer taste next time. I also added some chopped up cilentro with the tomatoes when served... along with plain white rice. This is a wonderful presentation dish with the yellow curry sauce and red chopped up tomatoes. Try it!

  4. This is FABULOUS! I definitely know what I'll serve if I have a dinner party any time in the near future. This is so lovely! Im a curry finatic, so I used just a tad more curry powder, hehe and just a touch more cayenne :-) I made only 3 servings, because I have a picky family! haha. This is beautiful and delcious.   5. Well I think I found the winner!! This was just outstanding, of all the recipes I tried, this is the one I'll be doing for company. From begining to end the taste was marvelous. The stuffing has just enough heat to make it interesting, the chicken was cooked perfectly, still moist and the sauce brought the whole thing together. And what a perfect ending, scrumptious Swiss cheese. The topping of tomatoes and parsley was a great choice to finish it off, the coolness against the heat of the stuffing and sauce. The butter and the wine made a special addition to the taste, the curry was just right, not overpowering. I used immitation crab and 2% milk, I can imagine it would have been even richer with cream, (although it didn't call for cream) and real crab, maybe next time. I have only one complaint (very small), the recipe said 30 minutes prep time, that was way off, it took me an hour to get it to the oven, maybe I'm slow, in any case next time I'll make it in the morning or even the night before and by the way it was worth every extra minute it took to prepare. The cook time was right on perfect. The instructions were very clear and easy to follow. Thank-you for a perfectly wonderful dinner, this one will go in my hard copy.

  1. This dish was outstanding! I will be making this again. I only changed to things: I added finely chopped red bell peppers and I substituted fresh cilantro for the parsley. Thanks for the elegant recipe.
     
  2. Oh Geema this was heaven in every bite! I used canned crabmeat, and I increased the recipe for 10 chicken breasts to feed 4 people, I did not secure the stuffed rolled breasts with any toothpicks and they held perfectly, I used half and half cream in place of milk for the sauce and did make some amount adjustments with the doubled recipe. I prepared the crab filling and rolled up the breasts early in the day and refrigerated until ready to be baked. This time I served this dish to my family with rave reviews, I plan on making this again to serve to guests in the near future, thanks so much for sharing hon!...Kitten:)

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
