  • Boil water. Pour over bulgur. Let stand for 45 minutes. Press out excess water. Let cool.
  • Pour 2T lemon juice over cut-up apples. Tart, crisp apples like Braeburn are best.
  • Chop and toast walnuts at 325. Let cool.
  • Cook chicken breasts, let cool, cut into cubes. Poaching works well.
  • Mix 1/4 cup lemon juice and 3T olive oil for dressing.
  • Combine all ingredients and mix well. Chill. Tastes best after sitting several hours. Store in refrigerator.
