Directions

  1. Preheat oven to 375 degrees F. positioning rack in oven center. Line 18 muffin cups with paper liners.
  2. In a bowl, combine apples and sugar; let stand for 10 minutes. Add cranberries, carrots, nuts, eggs and oil; mix well.
  3. Combine the flour, baking power, baking soda, cinnamon, coriander if used, and salt. Whisk to combine, then stir into apple mixture just until moistened. Fill paper lined muffin cups two-thirds full.
  4. Bake in preheated oven for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
