Cranberry Baked Pancakes-Arsenic and Old Lace B&b Inn

"This is a very quick and simple breakfast dish but looks very impressive. The apples, cranberries, cinnamon and maple syrup are wonderful together. Toasted pecans would also be good sprinkled over the apple slices with the cranberries. Serve with with warm maple syrup or fresh apple butter.   • Heat oven to 350 degrees.
  • Prepare pancake mix according to package directions and set aside.
  • Pour melted butter in 9" pie plate. Place apple slices in bottom of pie plate; arrange cranberries on top of apples.
  • Sprinkle cinnamon and drizzle syrup over apples; carefully pour batter on top.
  • Bake at 350 degrees for 30-35 minutes or until top springs back when touched. Loosen edges and invert onto serving plate. Cut in wedges and serve with warm maple syrup or fresh apple butter.

  1. Simply wonderful and, indeed, simple (especially if one "cheats" and uses the "Organic Batter Blaster" one can buy in the refrigerated dairy section of my grocery store :-) ) It is tart from the apples and cranberries and sweet throughout. I recommend it very highly!
     
  2. Delicious in every way! This was super easy and elegant enough for guests. I used Heart Smart Bisquick, but made a bit too much mix at 2 full cups so the end result was more cake-y than expected, but still wonderful. I also kept the skins on the apple, giving the cake a lovely look with the red cranberries and green-skinned apples. Also used sugar-free syrup. We will enjoy this many times, swissms! Thank you!
     
  3. Had company for the holidays and wanted something a little differant and still easy, also had some fresh cranberry sauce left over from the holidays so decided this was just the thing. So glad I picked it, the only thing I did differant was use my cranberry sauce (the kind made with fresh berries) and it was so easy to put together and pop in the oven. It looked very impressive with wonderful color and was even enjoyed by my very picky DGSs. I served it with butter and maple syrup on the table but it seemed to have made it's own syrup and no one really needed it. Thanks for a great recipe.
