  • Combine apple cider, cranberry juice and lemon juice in a large saucepot. Stir in powdered pectin. Bring to a rolling boil, stirring frequently. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minutes, stirring constantly. Remove from heat. Skim foam, if necessary. Ladle into hot jars, leaving 1/4 inch headspace. Adjust lids. Process 10 minutes ina boiling-water canner.

  1. This is a good simple apple jelly recipe that set up very nicely. However I was a little disappointed because you'd never know there was cranberry juice in it. The taste and color totally disappeared. To bad, I was really looking forward to something a little bit different. My cider was on the weaker side so I added a little cinnamon and a touch of brown sugar (along with a couple tbsps of rum, couldn't help myself!) Thanks Maryland Jim!
