Cranberry-Lemon Shortbread

  • With an electric mixer, beat butter and brown until light and fluffy. Beat in egg yolk and lemon zest.
  • Combine flour, salt and cranberries. Gradually stir flour mixture into butter mixture, blending until smooth. Form dough into a ball and wrap with plastic wrap. Refrigerate for 30 minutes to make it easier to handle.
  • Preheat oven to 350°F Roll dough out on a lightly floured surface or between two sheets of parchment paper to 1/2 inch thickness. Cut into desired shaped with lightly floured cookie cutter or knife. Place cookies on ungreased cookie sheets and bake until lightly golden around the edges. , 15-20 minutes. Cool completely on wire rack.
  • ICING: Mix icing sugar and cranberry juice to form a pale pink icing. Keep covered until ready to use. Once cookies have cooled, decorate each cookie with icing and a piece of cranberry, and allow to firm up.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
