Cranberry Liqueur (Light)

- 2 cups sugar
- 1 cup water
- 1 (12 ounce) package fresh cranberries
- 3 cups vodka
directions
- Combine sugar and water in a medium saucepan; cook over medium heat 5 minutes or until sugar dissolves, stirring constantly. Remove from heat, and cool completely.
- Place cranberries in a food processor; process 2 minutes or until finely chopped. Combine sugar mixture and cranberries in a large bowl; stir in vodka.
- Pour the vodka mixture into clean jars; secure with lids. Let stand 3 weeks in a cool, dark place, shaking every other day.
- Strain the cranberry mixture through a cheesecloth-lined sieve into a bowl, and discard solids. Carefully pour liqueur into clean bottles or jars.
- Note: Liqueur can be stored refrigerated or at room temperature for up to a year.

I gave this a try, since it looked and sounded so yummy. It lived up to it's reputation! I thoroughly enjoyed sharing it at a birthday celebration with friends. Everyone who tried it thought it was delicious! I loved it with 1/2 gingerale and 1/2 club soda, but it was wonderful on it's own as well. Thanks for posting, I'll be making this one again and again!

January 10: So far, this gets 5 stars for ease of preparation. With no fuss or muss, the jars are on a shelf in the cellar, waiting for time to work its magic. I'll report back when the three weeks are up. February 4: I have now strained out the cranberries and then strained the liquid twice. The result is a very clear, very deep red liquid, thinner than most liqueur/cordials. The taste is superior--there's no harshness and it is not overly sweet. This is wonderful as a cordial (and so pretty in the little crystal cordial glasses) and fabulous as the base for a cranberry martini/cosmopolitan sort of cocktail. Thanks, Redsie! UPDATE: Now, December 2007, this is so refined and elegant--almost like a cranberry cognac. It keeps getting better--but we are now almost out so it's time to start the process again.

*edit* just tasted this again and it is even better than the first time, I love this! this is so good and I look forward to seeing how much better it would be in 2 weeks, I plan on making more in the next couple of days, this is perfect for the holidays and I can see using this as a mixer for different drinks also thanks for sharing hon!...Kitten :)

Canadian girl that loves to cook for herself and for everyone around her!! I always enjoyed cooking but more so since I started taking better care of myself by eating healthier food (I am a Weight Watchers Lifetime member!). I still love my chocolate though!
