ingredients
- 1 cup water
- 2 tablespoons butter
- 1 1⁄2 cups bread flour
- 1 1⁄2 cups whole wheat flour
- 3 tablespoons brown sugar
- 1 1⁄2 teaspoons salt
- 2 1⁄4 teaspoons yeast
- 3⁄4 cup dried cranberries
- 1⁄2 cup chopped pecans
directions
- Add all ingredients (except cranberries and pecans) in order recommended for your bread machine.
- Add the cranberries and pecans when your machine alerts you (avoids them getting too beat up in the initial mixing and kneading).
- Bake on the "sweet bread" setting, medium crust darkness, 1.5 lb loaf.

DELICIOUS! Instead of making one loaf in the bread machine, I baked these in a min-loaf pan with eight openings 3.7" x 2.4" each, and baked them in my oven. I added three additional tablespoons brown sugar, one tablespoon vital wheat gluten, and two teaspoons orange extract to the recipe ~ because my kitchen was only about 60F, it took 2 1/2 hours for the little loaves to rise the second time! Made for P-A-R-T-Y 2011.

Super YUM! I followed the recipe, but also added a little sugar and cinnamon as the previous reviewer suggested trying for a sweet bread. It was very hearty, flavorful and delicious. I had plans for serving it with a meal, but it didn't last that long since everyone took pieces of it before any meal took place! Thank you for the recipe Chicago Clare! I'll be making this again!

Yum! We liked this very much. I didn't get around to sandwiches and although I only made it last night we have eaten 3/4 of the loaf (even my picky three year old had a second slice). Since we have pretty much just sliced it and eaten it out of hand I will probably add some cinnamon and maybe a little more sugar next time to make it more like a sweet bread. (For anyone considering making this bread- made as written it is like a hearty wheat bread studded with tons of stuff!) Anyway, I think it would be great either way. Thanks for the recipe.

I'm enjoying being a newlywed and am finding that cooking is such a joy when it's not just for me!
