Cranberry Pork Medallions

- 1 (1 lb) pork tenderloin, cut into 1/2 inch slices
- 3 tablespoons vegetable oil
- 1 cup onion, finely chopped
- 2 teaspoons garlic, finely chopped
- 3 tablespoons sugar
- 3⁄4 cup apple juice
- 1⁄2 cup cranberry juice
- 1⁄2 cup fresh cranberries or 1/2 cup frozen cranberries
- 2 teaspoons Dijon mustard
- 1⁄8 teaspoon crushed rosemary
directions
- In non-stick skillet, cook pork slices in oil for 3 minutes each side.
- Remove from skillet.
- In same skillet, saute onion, garlic and sugar until onions are caramelized.
- Stir in apple juice, cranberry juice, cranberries, mustard and rosemary.
- Bring to a boil.
- Reduce heat and simmer, uncovered, for 6 minutes.
- Return pork to skillet.
- Heat through.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
