Cranberry Pork Roast in the Crock Pot

- 4 medium potatoes, peeled and cut into 1-inch chunks
- 1 (3 lb) boneless center cut pork loin roast, rolled and tied
- 1 (16 ounce) can whole berry cranberry sauce
- 1 (5 1/2 ounce) can apricot nectar
- 1 small onion, chopped
- 1⁄2 cup coarsely chopped dried apricot
- 1⁄2 cup sugar
- 1 teaspoon dry mustard
- 1⁄4 teaspoon crushed red pepper flakes (optional)
directions
- 1. Place the potatoes in a 3-1/2-quart (or larger) slow cooker and place the roast over the potatoes.
- 2. In a large bowl, combine the remaining ingredients; mix well and pour over the roast.
- 3. Cover and cook on the high setting for 5 to 6 hours.
- 4. Remove the roast to a cutting board and thinly slice. Serve with potatoes and sauce.

This recipe makes for a very nice meal (or 2 or 3, especially for just the 2 of us)! I did use a slightly larger roast than the 3-lb one suggested, but other than that . . . We enjoyed the combo of flavors from the fruits & mustard, & will admit that I even included the red pepper! Very tasty, very easy to prepare, & very much a keeper of a recipe!
