Cranberry Roast Pork

- 4 lbs pork roast
- salt & pepper
- 1 (16 ounce) can whole sweetened cranberries
- 1⁄4 cup peeled and chopped yellow onion
- 3⁄4 cup orange juice

- ground cinnamon and ginger
directions
- Rub the roast with salt and pepper, and place on a rack in a baking pan. Roast at 325 deg. for 2 1/2 to 3 hours, or until an inserted meat thermometer registers 175 deg.
- In the mean time, combine all the remaining ingredients in a stainless-steel saucepan and bring to a boil. Remove from the heat.
- Halfway through the roasting process, begin basting the roast every 15 minutes with the cranberry mixture. The remaining sauce can be served on the side with the thinly sliced pork.
- Serve along with Wild Rice with mushrooms and onions for a wonderful meal.

This recipe makes even the most newbie cook look like a star! I have made this at least once a year ever since Smith's Frugal Gourmet Cooks American came out. It also makes the longtime family cook look like someone who worked hard. Honestly follow the directions & wait for the applause. It gives you plenty of time to make the sides, whenever you use it (I use it to distract from the Brussel sprouts recipes for the kids or yellow squash or grilled zucchini the grand kids are allowed to ignore by their parents,... ) serve with glazed carrots, garlic spinach, or any of the other sides listed above & biscuits. We've had it for Thanksgiving, Christmas Eve, Christmas Day & New Years Eve & Day goes well w/black eyed peas n hopping john, or collards. It was a big thrill with my Italian friends (cranberries were hard to come by in Italy at the time) make this & let the applause roll in.
