Cranberry Salsa

"This is good on top of anything that suits your fancy. I really like it on top of salmon, but I've even put in on Spam. Plan ahead, as this should be refrigerated for several hours or overnight before serving. Freezes well."

  • Put cranberries and sugar a little at a time into a blender and pulse until coarsely chopped. Scrape into a bowl and repeat until all berries/sugar have been processed.
  • Stir in remaining ingredients. Mix well. Cover and refrigerate for several hours or overnight.
