Cranberry Sauce

- 1 lb cranberries
- 1 tablespoon liquid stevia
- 1 tablespoon dried orange peel
- 1 cup water
- 1 pinch salt
directions
- combine all ingredients in a medium sauce pan, bring to a boil while stirring occassionally.
- Reduce heat and simmer for 10 minutes while continuing to stir occassionally.
- Cool to room temp in a bowl or strain through a fine mesh strainer, pressing all of the juice out of the berries and into the bowl.
- The high amount of pectin contained in the fruit will gell this nicely, but it's important to get all the juice out of the berries in order for it to set up. This would taste great with orange flavored liquid stevia.
