- 1 cup sugar
- 2 eggs
- 1⁄4 cup oil
- 1⁄2 cup orange juice, plus
- 2 tablespoons orange juice
- 1 1⁄2 cups flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 cup chopped cranberries (I use frozen)
- 1 teaspoon orange rind, grated
- 1⁄2 cup walnuts, chopped

Streusel
- 1⁄4 cup chopped walnuts
- 1⁄4 cup brown sugar
- 2 tablespoons flour
- 1 tablespoon melted butter
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon orange zest
directions
- Mix sugar, oil and eggs.
- Add orange juice.
- Mix dry ingredients, orange peel and walnuts.
- Add to egg mixture.
- Fold in cranberries.
- Spoon into greased muffin cups.
- Mix streusel topping and sprinkle on top of the muffins.
- Bake 18-20 mins 400°F.
- Can drizzle the tops with icing sugar and orange juice mixture after removing from the oven.
