Cranberry Sweet Potatoes

ingredients
- 4 tablespoons orange juice
- 2 tablespoons butter
- 2 tablespoons vegetable oil
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1⁄4 teaspoon salt
- 2 lbs sweet potatoes, washed, peeled and cut into 1 inch pieces
- 1⁄2 cup dried cranberries
directions
- In crockpot dish, mix orange juice, butter, oil, brown sugar, cinnamon and salt.
- Cover and cook on HIGH while preparing potatoes.
- Stir potatoes, and dried cranberries into warm mixture, cover and cook on HIGH for 3 - 4 hours.
- SHORTCUT TIP: Replace potatoes with drained canned sweet potatoes. Reduce cooking temperature to Medium.

This is a great alternative to traditional sweet potatoes at Thanksgiving. I will never take up valuable oven room with the candied version again! I added a dash of nutmeg, ginger, and cloves, along with the cinnamon. I also added a little more orange juice and brown sugar to make more syrup. To speed things up next time, I might parboil the potatoes before putting them in the crock pot.

Oh, this was awesome! I love sweet potatoes and cranberries, but would never have thought to put them together. It is a great combination with the orange juice, etc -- everything balances very nicely! It went well with my Bishop's Brisket and I'm planning to have it again with a nice pork roast or tenderloin.
