Cream Cheese and Tomato Rolls

ingredients
- 6 sun-dried tomatoes, finely chopped
- 7 ounces cream cheese or 7 ounces goat cheese
- 15 sprigs chives, rinsed and finely chopped
- 1 pie crust (store-bought or homemade)
directions
- In a food processor, combine the tomatoes, cheese and chives.
- Roll out the pie crust and spread the cheese mixture over the top.
- Roll up the pie crust and place in freezer for 10 minutes.
- While the roll is in the freezer, preheat over to 425°F.
- Remove roll from freezer and slice into rounds 1/2" to 3/4" thick.
- Place rounds on a baking sheet lined with parchment paper. Bake 15-20 minutes.

When I'm not finding creative solutions to put things off that really shouldn't be, I can be found in my kitchen baking treats for my family. I used to bake using cake mixes and such, until I moved to France, where decent mixes are nowhere to be found (or cost a small fortune if you do find them). So if I wanted an American-style dessert, I had no choice but to make it from scratch using French ingredients. Yum!
