  • 48 small corn cakes or 48 rice cakes

Directions

  1. To make two dozen sandwiches, simply spread a teaspoon of cream cheese between a pair of rice cakes.
  2. Serve each child two sandwiches (they fit nicely in a paper muffin cup).
