"This is from the 2003 Cooking Light recipe book. Usually cream cheese frosting is made with butter, but you will not even know the butter's missing. This is a great frosting! (Makes enough for a 9x13" cake.)"

  • Place room temperature or softened cream cheese and vanilla in a large bowl.
  • Beat with a mixer at medium speed until fluffy.
  • Add powdered sugar, beat at low speed until smooth.
  • This makes enough for a 9x13" cake -- for an 8" or 9" cake, doubling the recipe works well.
