Cream Cheese Sandwich (Variation No 4)

"Cream cheese and cucumber. When you need an idea of the nutritional values and they're not to hand,it's easy to overlook some of life's simple pleasures in the uncertainty, so it's good to have the info from recipezaar. Some of the 'Variations on a Theme' sandwiches are based on '60 sandwich ideas' found on vegan-cookbook website, the others are combinations that I have found to be successful myself. I use dairy products, but there are vegan substitutes available."

  • 4 slices brown bread (or wholemeal)
  • 2 -3 tablespoons cream cheese
  • 8 -12 slices cucumbers
  • Optional

  • baby mustard cress (salad cress) (optional)

  • Spread the bread with the cream cheese and top with the cucumber and salad cress, if using.

  1. Followed the advice of the other reviewer and sprinkled a little salt on these, and they were great. I also added to one a little squeeze of lemon, fresh dill and an heirloom tomato, and it was even better that way! Very yummy.
     
  2. These are so simple, yet so delicious. I am sure I've done variations on these before, but today, it just sounded like the perfect, light, late lunch...filling without making me lethargic! I'm not normally real big on salt, but for some reason to me cucumbers and large grain sea salt are a perfect marriage. So, I did add just a few grains here and there on the sandwich...I love the "crunch". I always have these ingredients on hand, so this great for me. Thanks for the reminder of a real keeper.
