- 18 1⁄4 ounces chocolate cake mix
- 1 1⁄3 cups water
- 1⁄2 cup vegetable oil
- 3 eggs
- 8 ounces cream cheese, softened
- 1⁄3 cup sugar
- 1 egg
- 1⁄8 teaspoon salt
- 6 ounces chocolate chips
directions
- Heat oven to 350 for shiny metal or glass pan or 325 for dark or nonstick pan.
- Beat cake mix, water, oil, and 3 eggs in large bowl on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Set aside.
- In a separate bowl, cream together cream cheese and sugar.
- Add egg and salt and mix well.
- Fold in chocolate chips.
- Fill paper-lined muffin tins 1/2 full with batter.
- Drop 1 rounded teaspoon cream filling on each cupcake.
- Bake at 350 for 25 minutes.
