Ingredients Nutrition

  • 1 cup chopped vegetables (see below for suggestions)
  • 2 tablespoons uncooked white rice
  • 1 12 cups chicken broth (or granular chicken bouillon and water )
  • 12 cup milk or 12 cup cream
  • Suggested vegetables
  • broccoli or zucchini
  • potato, use 1/2 cup potato and 1/4 cup chopped onion
  • carrot, use 1/2 cup carrot and add 1/4 cup chopped onion (and a pinch dill weed)
  • asparagus, can use canned cut asparagus

Directions

  1. Put all ingredients except milk (or cream) in medium sauce pan, bring to a boil, cover, reduce heat and simmer for 20 minutes.
  2. Let cool, then pour into blender container and blend till smooth.
  3. Pour back into sauce pan, stir in milk and heat.
