Cream of Chicken Soup - when You Don't Have Canned - Substitute

"I was out of Cream of Chicken soup in my pantry and I needed it for dinner. I altered a recipe I found here on Zaar and whipped this up. It may not be exact, but it works and I can't tell the difference at all. I use it instead of a 10 3/4 ounce can. I will use this any time my shelf is bare!"

  • Over medium heat combine butter, onion, garlic, milk, heavy cream, and chicken broth in medium sauce pan until combined.
  • Add flour, salt and pepper and stir until it thickens. (About 3 minutes).
  • Just add more flour if you want it thicker.
  • Use in any recipe you need it for.

  1. Yikes ..... according to the directions, you add the flour to the mixture that has already been combined over medium heat ..... While I am probably one of the few who didn't know..... you do NOT add flour to a hot liquid, I followed the directions verbatim and I got clumpy soup!! UGH, I guess this is one of those reasons, cooking just isn't my thing .... Something most of you obviously know already, but I did not .... ;-(

  1. I used onion powder instead of onion flakes and whole milk instead of heavy cream....still turned out amazing and much better than any cream soup I've ever used.
     
  2. Saved the day for me. It's evening and I don't want to run to the store just to get a can of cream of chicken soup. Most recipes call for dried milk. I don't have any of that so it was a relief to find this recipe. I had all the ingredients on hand! Thanks a bunch. I will probably use this in the future. It is definitely a more healthy choice than the canned soup.

  4. I saw some people were saying it turned out lumpy. I melted the butter, added the onion and garlic and sauteed. Then added the flour a little at a time stirring until it formed a paste around the onion and garlic. Then I removed from heat, and slowly added the milk and broth stirring constantly. Then back to the burner to thicken as stirring. Viola! No clumps! I really like this recipe very yummy!

  2. This turned out really good, and was a great addition to the potato soup I made! I didn't have any cream, so I just used all whole milk, and I also used 1/4 tsp garlic powder instead of the minced garlic, and 1/4 tsp onion powder for one of the tablespoons of dried onion. Fast, easy, yum.
     
  3. excellent! this worked out very well and it came together very quickly. i actually might like this flavor better than the real deal. i added a tad of garlic powder. next time, i think i'll use onion powder instead of the dried minced onion flakes, it made the mixture kind of lumpy looking, which is not a big deal really. thank you for posting. this recipe is a keeper!!!
     
  4. Very good. My kids can't have milk, so I made this with soy milk. I just substituted the milk and heavy cream with soy milk. It worked perfectly!
