Cream of Wild Rice Soup

"This is a great soup for those cold winter nights. Makes a lot but you can half the recipe easily."

  • Prepare the wild rice as directed on package.
  • In a 4 to 5 quart soup kettle, saute the onion, celery, carrots, ham and canadian bacon in the butter for about 3-5 minutes, or until vegetables have softened slightly.
  • Sift in the flour, a little bit at a time, stirring and cooking until the flour is blended in well, but do not let it brown.
  • Slowly, add the chicken broth, stirring until all the flour/butter/vegetable mixture is blended well.
  • Add the wild rice.
  • Adjust seasonings as desired.
  • Heat thoroughly.
  • Add the cream and reheat gently, but do not boil.

  1. This was a delicious recipe! I cut the recipe in half and added a small minced clove of garlic (I love that garlic) and followed the recipe the rest of the way. Put it in some containers and we went down to the ocean and sat at our favorite place and had the soup with some garlic bread I had heated and put in foil...have some left for todays lunch so we will enjoy it again. Thank you and I will be making this again. Made for Zaar Chef Alphabet Soup Game 2009.
     
  2. easy to make, and delicious on a cold winter's day! i put in some diced potato, green pepper, and mushrooms. i used regular bacon and leftover spiral cut ham. the critic (one picky boyfriend of the daughter) even loved it, amazing!
     
  3. I really enjoyed this soup. It was so easy to prepare and the flavor was terrific. Only thing I did different was to simmer the soup on low heat for about 1 hour. The veggies were still a little hard, so I must not have cooked them enough first. Besides, all soups should simmer for a while on a winter day, shouldn't they? Also I added a tsp of Mrs. Dash to the veggies while cooking, but then I pretty much add that to everything. Thanks Nimz!
     
  4. WOW, was this ever good!! If I had a restaurant, Nimz your soup would be on the menu!!! This is very easy to make and the meat adds such a nice flavor. I'm going to make this regularly from now on. I can't wait for our DD to come home from college at Thanksgiving and serve her this. I made this for 1-2-3 Hit Wonders game 2007
     
  5. The soup was outstanding..just next time will cutback on amounts..lots of soup for 2 people..(wife & I ) but kids didnt mind they came over and took home left overs..LOL..also made rice night before and it was just fine..

Made some tremendous friends that I still think of often. I'll continue coming here because my recipes are here and so many more that I tried over the years as a member.
