Directions

  1. saute' onions, celery in 3 tbs butter, set aside.
  2. Melt 8 tbs butter, stir in flour until smooth.
  3. Beat egg yolks with milk, chicken broth and cream. slowly add to roux, stirring constantly. simmer and stir until thick.
  4. add onions and celery to cream sauce and season with salt and pepper to taste.
  5. add optional ingriedents if desired.
