7 ounces penne pasta
2 tablespoons oil
2 shallots, chopped
1 green pepper, deseeded and chopped
4 ounces mushrooms, chopped
7 ounces canned tuna, drained
3 tablespoons heavy cream
fresh ground black pepper
12 basil leaves, shredded

directions

Cook the pasta in plenty of boiling water, according to the pack instructions.
Meanwhile, heat the oil in a small frying pan and cook the shallots and green pepper until soft. Add the mushrooms and cook for 2-3 minutes more.
Stir in the tuna and cream and heat through. Season to taste.
Drain the pasta and toss with the tuna sauce. Garnish with basil and serve.
