Creamy Chicken & Mushroom Pasta

"I love this pasta dish. I just saw a similar recipe in a magazine but minus a few of my inclusions. I think its the mustard that gives this the unique taste. I hope you enjoy it."

  • Cook pasta until cooked, drain and return to the pan.
  • In a large frypan, add olive oil and fry the onion until translucent, add chicken, chilli, basil and oregano and cook until browned. Remove from pan.
  • In the same pan add mushrooms and cook until tender.
  • Add chicken stock, cream and mustard and return the chicken and onion mixture to the pan.
  • Bring to boil. Bring to boil, reduce heat and simmer until chicken is cooked through and the sauce is thickening.
  • Add the chicken sauce to the pasta and fold through.
  • Top with shaved parmesan cheese.

  1. Sooo tasty!!! Hubby even ate the mushrooms without complaint. Didn't have any chilli powder or basil and added a bit of butter to cook the mushrooms and used Philadelphia cooking cream. Will certainly become a regular week night dinner for us!
     
  2. Found this recipe when looking for something different to cook.<br/>Definitely recommend it, although I found it easier to start cooking the pasta at same time as the chicken so that they were both ready at the same time.

I added 4 rashers of diced short cut bacon and cooked with the onion and a dried herb mix for the herbs and heaped teaspoons of the mustard, 200 grams of mushrooms (will use more next time) and 3 chicken breast halves. As I was serving 3 I used 300 grams of pasta (I had some penne and bow ties left that I used). Still had enough left over that I could have had 4 servings but the DM has claimed them for lunch tomorrow. Thank you ozzygirl for a keeper though will have to sub spring onion for the onion if the DH is having any the next time.
     
  5. We really loved this. I doubled the amount of mushrooms as we do enjoy extra mushrooms through our pasta. Because of this I added an extra slosh of cream, an extra heaped teaspoon of mustard and an extra 1/4 teaspoon chilli. I didn't bother taking the chicken/onion mixture out of the pan but instead just added the mushrooms and carried on with the recipe. It worked fine. (Didn't want to dirty another dish ;)). Found that we needed to add salt. The mustard really does add a fabulous flavour. Thank you for posting, this one goes into our favourites as a great/easy week night dinner.

I live in Perth, Western Australia. I am an Office Manager in a Mining Exploration Company. I love summer and going to the beach. I also like rugging up in warm clothing during winter. I have two cats who I adore but who live with my parents as our place is on a main road and I want them to have a long life. We have recently acquired 2 Jack Russell puppies who are so adorable. They are now part of our little family. DH and I like to get away down south of Western Australia at least 4 times a year. We are happy to stay in 5 star hotels or camp! Depends on the mood! We have recently purchased a block way down south of Western Australia in a little coastal town called Hopetoun. We are looking forward to building a house and spending a lot more time down there, with the view that we will retire down there and enjoy our fishing life. I am happy with my life and look forward to having children with my lovely husband.
