- 1⁄2 cup nonfat plain yogurt
- 1⁄4 cup buttermilk
- 3 tablespoons fat-free mayonnaise
- 1⁄3 cup cucumber, finely diced
- 1 tablespoon of fresh mint, finely chopped
- salt, optional
- pepper
directions
- Firm, small-seeded European cucumbers work best in this dressing.
- If your cucumbers have large seeds, remove them before dicing.
- In a small bowl, stir ingredients together until evenly blended.
- Spoon over greens.
