Creamy Green Beans and Pasta

  • If using fresh green beans, cook in a covered saucepan in a small amount of boiling water for 20 to 25 minutes or until crisp-tender. Drain.
  • Meanwhile, in a large saucepan cook pasta according to package directions, adding the mushrooms, frozen green beans (if using), and green onion during the last 4 to 5 minutes of cooking. Drain pasta and vegetables in a colander. Set pasta mixture aside.
  • For sauce, in the same large saucepan stir together yogurt, flour, mustard, nutmeg, and pepper. Cook and stir until thickened and bubbly. Stir in pasta mixture, cooked fresh green beans (if using), and pancetta or ham. Heat through. To serve, sprinkle with Parmesan cheese.

  1. Added saute onion & garlic to frozen chunks of ham. Served with a savory onion-cheese bread. Never thought a cream sauce made from yogurt, mustard & nutmeg (things always on hand!) could taste so wonderful.
     
  2. Really liked this, the mustard really makes it for me. I used fresh green beans, steamed them separately, and sauteed the mushrooms with the bacon ( I used bacon ;) ). I used a Greek yoghurt, overall we really enjoyed this and I will definitely be making it again, thank you AZPARZYCH! Made for Spring Photo Tag
     
  3. This was an interesting pasta dish. I liked the addition of the green beans and mushrooms. I felt that the mustard was a tad too strong and next time will cut back on it. I felt it needed a little more kick, maybe red pepper flakes or garlic. I bought ham and forgot to add it, maybe that would have brought it up a notch.
     
  4. I liked this. I think we might tweak it to fit our tastes a little by adding some garlic and salt and pepper. I did use sour cream because twice I had forgotten to get the yogurt. I used ham and it didn't seem to add much, it would probably be more flavorful with the pancetta. Anything that starts with green beans at our house is bound to be a winner.

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
