Creamy Herbed Chicken and Mushrooms With Rice

  • Place 1 1/2 cups (625ml) stock in a saucepan over high heat and bring to the boil, stir in the rice, cover reduce heat to low and cook for 12 to 15 minutes or until rice is tender and stock has been absorbed.
  • Meanwhile heat oil in a large frying pan and add chicken and cook, in batches and cook for 5 minutes or until golden, remove and set aside.
  • Add mushrooms, onion, thyme and 1/2 cup (125ml) stock and cook for 5 minutes, stirring until vegetable soften, remove and set to one side.
  • In a bowl or jug, combine cornflour with remaining stock until evenly mixed and pour into the frying pan and stir the mushrooms and beans back in and bring to the boil, stirring constrantly and then reduce heat and cook for 5 minutes, stirring occassionally until beans are tender and then return chicken to the frying pan and stir in the sour cream and cook until heated through.
  • Serve over the rice.

  2. Made half a recipe and it was very good. Mine didn't thicken up like I wanted (almost like a soup) Will have to add more cornstarch or cook the sauce longer.
     
  3. We both loved this homey comfort recipe. It was so easy to make this to please both DH and myself, I just ask him to take his serving before I added the sour cream to the rest. The flavors are mild and who doesn't love rice with a gravy or sauce? It's easy and quick to make and makes you want to sit on the sofa with your feet up and the tv on for dinner.
     
  4. Easy, warm and filling. I used sliced baby bella mushrooms I had on hand and fat free sour cream. Leftovers reheated well for lunch the next day too! Thanks for sharing!

I steamed my chicken instead of frying (to save on fat) and sauted the veggies in a non stick pan with a spray of canola oil cooking spray and I used reduced fat-sour cream. This is a simple tasty easy peasy weeknight meal! Next time I think I might try brown rice! :) Thanks for posting! :)

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
