Creamy Pork With Mushrooms and Shallots

Ingredients Nutrition
- 2 3⁄4 lbs pork shoulder, cut into chunks
- 2 onions, chopped
- 3 cups chicken broth
- 6 1⁄2 ounces cream cheese with garlic and herbs
- 12 shallots, peeled
- 7 ounces button mushrooms, sliced
- 3 stalks fresh tarragon, chopped
- 1 bay leaf
- 1 tablespoon oil
Directions
- Heat a large pan with the oil and brown the meat (you may need to do this in two batches). Once browned remove to a warm plate and set aside. Add the onions, shallots and mushrooms to the pan and cook for 5 mins stirring occasionally.
- Return the meat to the pan and add the broth, tarragon and bay leaf and season to taste. Simmer for 30 minutes Stir in the soft cheese and bring back to a simmer. Remove the bay leaf and serve.
