  • Melt margarine in a Dutch oven over medium heat.
  • Add onion: saute 3 minutes.
  • Add sage, curry powder, and nutmeg; cook 30 seconds.
  • Stir in flour; cook 30 seconds.
  • Add broth tomato paste, and salt, stirring well with a whisk.
  • Stir in pumpkin and apple; bring to a boil.
  • Cover, reduce heat, and simmer 25 minutes or until pumpkin is tender, stirring occasionally.
  • Remove from heat; cool slightly.
  • Place mixture in a blender or food processor; process until smooth.
  • Return mixture to Dutch oven; add milk.
  • Cook until thoroughly heated.
  • Garnish with sage sprigs if desired.

  1. Yummy, I made this for dinner last evening. Didn't have fresh pumpkin so used canned and didn't put in the blender as we like a chunky soup ,soooo left the apple chunky. Very good. Served with a baby green salad.
     
  2. Yes, I forgot to mention, that you can also use canned pumkin for this recipe to save come time. (I dont have canned pumpkin in my country) I have also experement with canned squash. It's baking now, so if its any good, I will post the recipe here. If not, don't go looking for it. Love you guys!
     
  3. This recipe was pretty good. It is a much milder tasting soup than one might expect, and I actually ended up doubling the spices to 'kick it up' just a bit. Overall it was a great soup considering the nutritionals.
     
  4. Tried this yesterday. Turned out great when I substituted butternut for pumpkin. Not sure I could tast the sage, however, with the other flavours
     
  5. I love this recipe. I left out the curry because I don't like it and sage because I didn't have any, but I added cinnamon. It was delicious. Thanks!

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper) I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke) On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
