  1. Yum! This was delicious and satisfying! I cut it down to a single serving, using 2 eggs, 1 t. butter, 2 t. milk (I used evaporated milk) and used a wedge of Laughing Cow Creamy Swiss Cheese. Following the cooking directions, total time cooked in microwave was just over a minute. Served with a little salsa on top and the green onions made it extra tasty. Thanks so much for posting...it's a keeper!

  2. Yummy eggs. These were super simple to make and very creamy to eat. I only had one problem.......I left the sliced green onions on the cutting board until I ate about half of them. lol. Thanks for sharing, MamiJ. Made for Down Home Cooking tag.

  3. These were yummy and how easy to be able to prepare them in the microwave. I did make this lighter by using half the butter and 2/3 the cream cheese - but they were still rich and delicious. I was surprised just how well the microwave worked, and the cream cheese gave them a really nice added creaminess. I chose a 4 cup glass measuring cup, and that was good, it did bubble up quite a bit. Made a full recipe for the two of us served with toast. They even reheat beautifully (DH had his serving later, and I tasted them also). I bet this method would work even without the cream cheese (plain scrambled eggs) - I will be interested to give that a try sometime too.

  4. I, too, was hesitant to microwave eggs, but these were far easier and fluffier than I thought. Easier clean-up than stove eggs as well. I served them on a slice of toasted rye bread to extend the NYC theme! (Used 2 eggs, for 2 people - it was plenty; my photo is what it looks like when you don't mix in the cream cheese!) 5. I was skeptical that microwaved eggs could actually come out fluffy and creamy, but these really do! I just wanted a single serving, so I used 2 eggs, half a tablespoon of butter, and a generous splash of milk (plus the rest of the ingredients to taste). Simple, quick and tasty, exactly what I need in the morning! Thanks for posting! Made for CQ 2016 NYC for Team Iota Eta Pi

I began cooking as a kid with my mom. I cook mostly Mexican food, but my best recipes are the ones that I improvise at the last minute! Especially desserts, which I love to cook, but always forget to write down. I'm a stay at home mom of three kids- 2 boys (3 & 5years old) and a 1 year old baby girl. My husband and I have been married for nearly 8 years. I want to take a moment to thank all of you who have made my recipes and even took the time to review and/or photograph them. I appreciate every one of them! <img src="http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/cookbookZWT.jpg" border="0" alt="I am alw"> <img src="http://i27.photobucket.com/albums/c175/emmyduckie/banner2009.jpg" border="0" alt="Photobucket"width=90%> <img src="http://i132.photobucket.com/albums/q23/vseward/Bevy/officialmemberofthebevtaggame.jpg"> <a href="http://www.recipezaar.com/bb/viewtopic.zsp?t=278234"><img src="http://i25.photobucket.com/albums/c99/ruemke/banners/beans-1.jpg"> <img src="http://i250.photobucket.com/albums/gg271/MrsTeny/Permanent%20Collection/PACSpring09Iwasadopted.jpg"> <img src="http://i10.photobucket.com/albums/a132/tgifford/Game%20Room%20Banners/AM%20Banners/IRecommendGame_AssortedChoc-part-1.jpg" border="0" alt="Photobucket"> <img src="http://i21.photobucket.com/albums/b280/carolinamoon21/Ingredients/Other/Elves-appreciationSTICKER.jpg">
