  • In a large pot, combine first nine ingredients; bring to a boil.
  • Reduce heat; cover and simmer for 15-20 minutes, or until potatoes are tender stir in beef and 2 cups cream; heat through.
  • In a small bowl whisk the flour and remaining milk until smooth; gradually stir into soup; bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.
  • Reduce heat to low and stir in cheese until melted.
  • Season with salt and pepper.
  • Top with bacon just before serving.

  2. I really liked this soup! I added the cayenne pepper and buy my tongue was tingling! It is tasty and comfort to the core. I love the crumbled bacon on the top. I think I may try some rotel tomatoes next time. Thanks for posting!
     
  3. My husband, the hamburger lover, loved this soup. I added some spices to increase the heat~ red & black pepper, onion salt, and hot Mrs Dash. I left it simmering on the stove as we ended up eating later than planned, and it did thicken up quite a bit, becoming more like a thick stew. I'm sure it could be thinned out again with milk, but, we liked it the way it was.
