  • Place spinach in colander.
  • In pot, bring next 3 ingredients and enough salted water to cover, to a boil.
  • Cook 20 minutes; pour over spinach to drain. Discard rosemary.
  • Return potatoes and spinach to pot and stir in butter and broth.
  • Using hand masher, mash mixture until smooth.
  • Stir in peppers and serve.

  1. This is a nice change from plain mashed potatoes. I used frozen spinach with liquid squeezed out. I did have to add salt and pepper. Thanks for this recipe.
     
  2. Made this tonight as a side! Really enjoyed the change up from regular mashed potatoes. The only thing I did differently was to saute the spinach & then added it to the potatoes prior to mashing. I also left out the red peppers just because I was making a chicken dish with red peppers & didn't want to overload the family with 1 ingredient. Next time I will definitely add them those. They were beautiful with the spinach added & I know the red peppers will add an even greater dimension! Thanks for the recipe!
