  1. Sauté onion in butter.
  2. Add chicken stock and half and half; bring to a boil.
  3. Whisk in the grits. Reduce heat and simmer for 15 minutes.
  4. Stir in cream cheese, salt, and pepper.
  5. Continue to simmer 1-2 minutes longer until grits are creamy.
  6. Stir in Parmesan cheese and green onions. Serve immediately or cover and keep warm.
