Creamy Vegan Broccoli Soup

- 2 medium potatoes, peeled and cubed
- 2 stalks celery, sliced
- 750 g frozen broccoli
- 500 ml water
- 750 ml rice milk, plain, divided
- 1 1⁄2 teaspoons dried basil
- 1⁄2 teaspoon dried tarragon
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
directions
- Put potatoes, celery and broccoli in large pot. Add water and bring to a boil, reduce temperature to simmer.
- Cover and cook for 10 minutes until potatoes are tender.
- Blend half the vegetables and their remaining water with half the rice milk and spices. Blend remaining vegetables and rice milk until smooth.
- Pour the blended soup into a clean pot.
- Reheat gently.
