  • Prick the potatoes with a fork and sit them on a microwaveable plate.
  • Rub the skins with the olive oil, and sprinkle with some sea salt if you like.
  • Microwave on High for 8 mins until soft in the centre.
  • Leave to cool while you prepare the topping.
  • Mix the soft cheese, celery, onion, apple and half of the walnuts; season to taste.
  • Cut the potatoes open.
  • spoon on the topping
  • sprinkle with the remaining walnuts.

How I rate... 5 stars - perfect, will make again without any changes. 4 stars - Liked it, will make again again but with changes. 3 stars - had to make major changes but got it to work. 2 stars - had to make major changes and it didn't work. 1 star - went terribly, a waste of time and ingredients, I cried, BF cried the cats cried you get the picture...
