Creamy Wild Rice Soup

"I got this recipe from my SIL. It is the most creamy wild rice soup you will ever eat. It is not diet friendly, but delicious anyway."

  • 1 (6 ounce) box uncle ben's long grain and wild rice blend (original recipe)
  • 1 lb bacon, fried and crumbled
  • 1 medium onion, sauteed
  • 2 (10 3/4 ounce) cans cream of potato soup
  • 2 cups Velveeta cheese, cubed
  • 1 quart half-and-half

  • Prepare rice as directed on box. Saute onion in butter or oil Fry bacon until crisp and crumble Put all ingredients in the crockpot on low setting and heat through. Stir occasionally. This recipe makes about 3 quarts of soup.

  2. THis is wonderful, I used cream of mushroom as that is what I had on hand, I also added in about 4 sliced baby portabello mushrooms when I was sauting the onion. It was delicious!

I am a retired nursing supervisor. Spent the last 25 years supervising nursing working for the state of Iowa. I retired 3 years ago. I love to cook. My hubby raises a big garden and I can most of it. We enjoy it during the winter months. I have 13 grandchildren and they are very special. I love to try new recipes but my husband is a true Iowa farmer and loves the comfort foods. He will try anything but he prefers what he has had all of his life. I learned to quilt after retirement and have completed several quilts. I am working on a baby quilt for my first great granddaughter at the present. I hope to complete quilts for all 6 six of our children too. When I am desperate, I go to the oldest cookbook in my collection which is Better Homes and Gardens.
