  1. heat olive oil in a large saucepan over medium-high heat. Add the bell peppers, onion, and salt and pepper to taste and cook, stirring occasionally, until the vegetables are softened. Stir in the garlic, oregano, and cumin and cook for about a minute.
  2. Add the tomato sauce, fill the #10 can with water and pour that in and bring to a boil. Reduce the heat and simmer for about 30 minutes, until all the flavors have blended. You'll have extra sauce to use for other recipes.
