- 2 cups all-purpose flour
- 1 pinch salt
- 2 1⁄2 cups water, and milk mixed
- 2 eggs
- 1 tablespoon melted butter
directions
- Sift flour and salt into big mixing bowl. Hold sieve up high to allow lots of air into the flour.
- Make a hollow in the flour and break eggs.
- Whisk them, drawing in only some flour from the sides.
- Add melted butter.
- Beat mixture, slowly brining in some flour, until it is smooth and just thick enough to coat a wooden spoon.
- Add water and milk a little at a time.
- Keep whisking and drawing in the flour until everything is mixed together.
- Melt a little butter in a frying pan on medium heat.
- Pour half a cup of batter into the frying pan and swirl around to coat bottom of pan.
- Flip crepe once it starts to bubble and cook evenly on both sides.
- Add your favorite topping and enjoy!
