Crispy Crunchy Potato Bites

- 2 kg potatoes (peeled and cut into 2cm cubes)
- 29.58 ml extra virgin olive oil
- 2 sprig rosemary (fresh, torn)
- 3 sprig lemon thyme (fresh, torn)
- 4 garlic cloves (halved)
- 1 sprig lemon thyme (fresh extra to serve)
directions
- Preheat oven to 200C/180C fan forced and line a large baking tray with baking paper.
- Place potatoes in a bowl and add oil, rosemary, thyme and garic and season with salt and pepper and then toss to coat.
- Spread the potatoes mixture on prepared tray in a single layer.
- Roast for 50 to 60 minutes until golden and crisp and serve sprinkled with extra thyme sprigs.

We loved this recipe. The potatoes were perfection. Crisp, crunchy and tender on the inside. They were a lovely golden brown. I didn't use fresh rosemary or thyme as I was out. I subbed with ground rosemary and dried thyme, they worked great in this recipe. Thank you for sharing another lovely recipe Pat. Made for Went to Market Tag game.

This potato dish is one that I'll be making over and over again. It was well enjoyed by all in the family. I didn't use lemon thyme as it's nowhere to be found around here unless you grow it yourself. I used regular thyme and grated lemon rind which worked out very well, though I'm curious on how lemon thyme would have tasted. Made it for Everyday is a Holiday tag game. With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
