  1. Boil sweet potatoes and cool.
  2. Dice sweet potatoes and set aside.
  3. In skillet, cook bacon and onion until tender.
  4. Add sweet potatoes and sprinkle with salt and sugar.
  5. Cook uncovered over medium heat until potatoes are crispy on the bottom.
  6. Turn and crisp the other side.
